This action updates a field (including custom fields) to a specified value. 

What scenarios could you use this field with?

Let's say you are nurturing a lead and they have gone silent after your customer journey. Maybe you would update the field LEAD STATUS to NO RESPONSE and this would end the Journey or maybe start a new Journey in the future.
